White Chicken Chili
1 lb boneless skinless chicken breasts, cubed
1 ½ t. garlic powder
1 T. oil
1 can (15 ½ oz.) great Northern beans, rinsed and drained
1 can garbanzo beans, rinsed and drained
1 can white pinto beans
1 can (14 ½ oz) chicken broth
2 cans (4 oz.) chopped green chilies
1 t. salt
1 t. cumin
1 t. oregano
½ t. pepper
¼ t. cayenne pepper
1 t. chicken bouillon
1 cup sour cream
½ c. half and half
In a large saucepan, sauté’ chicken with garlic powder and oil until chicken is cooked. Add beans, broth, chilies and seasonings. Bring to a boil, reduce heat; simmer, uncovered for 30 min. Remove from the heat; stir in sour cream and half and half.
Serves 8
