Puff


Puff
Mix butter, corn syrup, and brown sugar in saucepan. Cook on med heat for 2 min or until bubbly around edges, remove from heat. Add baking soda and stir until combined. Pour caramel slurry over corn puffs and stir until puffs are coated. YUM! Enjoy with a fresh Diet Coke.

Carmel Corn

Carmel Corn

1 c. brown sugar
1 c. corn syrup
½ c. butter
1 can sweetened condensed milk
1 big bowl of popcorn



Bring to a boil. Boil for 4 mins for popcorn and 5 min for popcorn balls. Pour over popcorn and stir.

Peanut Butter Rice Crispy Treats

1 c. corn syrup
1 c. sugar
1 c. peanut butter
1 tsp. vanilla
5 c. rice crispies

Heat corn syrup and sugar on med-high heat, bring to a boil. Remove from heat and stir in vanilla and peanut butter.  Mix in rice crispies and pour into a 13 X 9 in. baking dish (sprayed with Pam).

*Tip: wet fingers with water to spread out the rice crispies evenly in pan.

Banana Bread


Banana Bread
Grandma Clark’s 100 year old recipe

1 ¼ c. sugar
½ c. shortening
2 eggs
1 c. buttermilk*
3 c. flour
1 tsp. baking soda
1 tsp. baking powder
½ tsp. salt
5 large bananas mashed
¾ c. nuts (optional)

Preheat oven to 350 degrees. Grease and flour 2 med loaf pans. Cream shortening and sugar, mix in eggs and buttermilk. Sift dry ingredients and add in. Add bananas and nuts. Do not over mix. Bake 350 for 45-60 mins or until toothpick comes out clean.

*Buttermilk substitute: one cup milk and 1 tsp. white vinegar.

Spiced Applesauce Muffins

Spiced Applesauce Muffins
¾ cup Oil
1 cup Sugar
½ cup Applesauce
2 Eggs
1 ½ cups Flour
1 teaspoon Allspice
½ teaspoon Cinnamon
½ teaspoon Nutmeg
¾ teaspoon Salt
½ teaspoon Baking Powder
½ teaspoon Baking Soda

Topping:
¼ teaspoon Cinnamon
¼ teaspoon Allspice
Spiced Applesauce Muffins
¼ teaspoon Nutmeg
2 tablespoons Sugar
½ cup Chopped Pecans or Walnuts (Optional)

Mix all ingredients together and fill lined muffin cups ¾ full. Sprinkle generously with topping mixture. Bake at 400 degrees for 14-17 minutes until golden brown or until toothpick comes out clean. Let muffins cool and store in an airtight container. Makes 12 muffins.

Buttermilk Syrup

Buttermilk Syrup

½ c. butter
½ c. corn syrup
½ c. sugar
¾ c. buttermilk (2/3 c. milk and 3 T. vinegar)
1 t. baking soda
2 t. vanilla

 
Combine butter, corn syrup, sugar
and buttermilk and boil for 1 min.
Remove from heat and add soda and vanilla.
Refrigerate leftovers.
